
Ajisen Ramen was founded in 1968 in Kumamoto, Kyushu, Japan by Takaharu Shigemitsu. It currently has over 800 locations worldwide. Its name means "a thousand flavors of ramen," and its logo, "Chichan" (a little doll), is in memory of the founder's daughter. Ramen is a very popular Japanese dish consisting of a bowl of broth and wheat noodles with various toppings, from vegetables to protein. There are four main types of broth used to make ramen: miso (soybean paste), shoyu (soy sauce), shio (salt), and the most famous, tonkotsu (pork bone broth). Our ramen is famous for its milky-white tonkotsu broth, which is made by slowly simmering pork bones for over 12 hours. In addition, our authentic al dente wheat noodles are made fresh daily, creating the perfect ramen combination.
Our flavor is characteristic of the Kumamoto region, Kyushu, which uses garlic and other strong flavors combined with Tonkotsu broth.
